Oh my gossssh get excited, I found the yummiest new place to eat if you’re in Las Vegas! Botero is located inside the Encore Hotel, Wynn’s sister hotel, and is hands down one of the top 5 best places I have ever eaten. I don’t know where to evennn begin telling you how much I love it… from the decor to the food, everything was amazing. Just another reason why Wynn & Encore are my favorite hotels!

We initially wanted to try out the SW Steakhouse but due to Cinco De Mayo madness they were booked, good thing because next up was Botero. Botero overlooks the XS Nightclub and pool area at Encore so you can eat either a Summery poolside lunch or an indoor dinner. The interior is circular, similar to the layout of XS. Picture giant pillars covered in white, diamond-quilted leather, and as the restaurant centerpiece? A gigantic glossy, black seated lady sculptureĀ inspired by Colombian Artist Fernando Botero. Overall, Botero has a super modern yet fun ambiance suitable for all ages and personalities :) Now onto the yummy part, the food… I have never been so indecisive when ordering before, the menu was amazing! Veggies, chicken, fish, mac and cheese, how could I ever choose? I decided not to be totally fat and started off with their parmesan, asparagus, pistachio salad which was great. Oh wait then we ordered the mushroom ravioli so I suppose I wasn’t all that healthy ;/ The ravioli were delicious, small portion but delicious, wasn’t too mushroomy at all. Great appetizer to share.

For the main course we shared the Halibut. I didn’t want to over eat so we ordered a bunch of sides and split the halibut. The halibut comes poached but that sounded weird so we ordered it blackened. The chef had no problem preparing it that way for us which was nice. Accommodating staff? How odd? I definitely recommend the halibut blackened, it was soooo delicious. A bit spicy but cooked to perfection. Best halibut I have had in years, maybe even forever?

For sides we ordered broccoli which had chopped garlic and tomato pieces mixed in, and also the jalapeno carrots. Those were a bit soft, but amazing flavor. I love spicy food! Everything was so so good. Curious about who is behind the food? Botero is run by Chef Mark LoRusso, formerly of Wynn Las Vegas’ Tableau.

Cocktail wise I decided to order a margarita because after all, it was Cinco de Mayo. I didn’t think it would be good considering we were at a fancy steakhouse, but it was delicious! I tweeted to Wynn about loving Botero and they replied back that I had to try the Seated Lady cocktail, one of their signature champagne cocktails. Now I’ll have to go back just to try it out, sounds delish!

Botero definitely is a place to go for any occasion, a date, girls night out, poolside lunch… some of the best food ever, amazing decor, great staff, and delicious cocktails, what more could you need?

    you went to a Steakhouse and no one ordered steak?! How sad. Here’s my meal- Foie gras, 20oz. ribeye (medium-rare), truffle mac ‘n cheese, crisp pork belly, and banana bread pudding for dessert. This is why I will one day weigh 500 pounds.

    Because my husband loves steak and refuses to overpay for a side of cow, Smith and Wollensky has ‘em all beat.
    We get to Vegas 3 to 4 times a year, a short drive from our home in the California Desert. We’ve eaten at many Las Vegas restaurants and have enjoyed them however. One of the most recent experiences we had before we found Smith and Wollensky was at PRIME at the Bellagio. The restaurant is located at the fountain/lake level so that you can emjoy the dancing fountains as you dine. We reserved well in advance to get a Window Booth. Lush & Plush would best describe the decor and ambience. The ceilings are vaulted and from the ceilings hand emerald green drapes which serve to 1-lower the noise levels 2- add more privacy as the waiter will close them if you please. As you enter the restaurant from the lower level escalator at Bellaggio the first thing you notice is a line of staff, about 25-30 standing in the foyer waiting to greet you….there’s an immediate feeling that they’re expecting you, you’re home and it’s time to eat. Service was excellent…..BUT, we won’t be going back anytime soon….it’s ridicuious expensive. The least exppensive bottle of wine offered was more that $69…and steak dinners at PRIME started at $40 (that was a petite, with a potato (no vegetable,only). I’m not rich but the only way I’ll ever be & stay financially independant and wealthy is to not pay stupid prices for dinning.
    That being said, a client of mine recommended Smith & Wollensky. A stand alone restaurant located right on the strip and the front door opens right from the strip sidewalk ! So, your not in a hotel and the location is pefectly convenient on the strip, it’s just North of the Hard Rock Cafe.
    You feel like you’re at a dinner in someones private home as each dinning space is confined to 4 or five tables per room, there are 3 stories of these mini dinning rooms and some of the dinning rooms have a full bar….so the libations aren’t far …just wave your hand. Hubby had the most fantastic dinner, steak of course, bottomless salad, potato and veggie for $27! Unbelievable but I’m not done…service A+, Bar selection…I don’t think there’s any label they don’t carry and some of the oldest scotch, whiskeys, liquors, etc. I’m not a big liquor drinker, I like wine…and I didn’t have to look far ro find what I wanted.
    Finally, when our dinner’s were served we gasp at the size of the steaks….they were gigantic! Neither of us could finish. The place is alway’s packed, reservations a must but then, now I know why….it’s the secret to thier success…FANTASTIC MOUTHWATERING FOOD
