I love that it is 11am and I am googling cocktail recipes. I think because it’s sooo hot out, my body thinks it is back in Mexico on vacation when in reality I am just at home sweating.  Anyway, I have a new fun cocktail recipe for you all to try out. If you love mojitos, you will love this one! It is a super fun drink to bring to a Summer party or to just sip at the pool with friends. When we went to Cabo, all we drank was flavored mojitos at Nikki Beach. I miss Cabo :( Anyway try out this fun recipe, you can also change the fruit to another one you like better.

The strawberry mojito is a girl’s best friend and the perfect companion for ladies day or night. (Guys can of course drink it too, just don’t let anyone see)

INGREDIENTS for 4 Mojitos

  • white sugar, for rimming
  • 1 large lime, quartered
  • 1/4 bunch mint leaves
  • 5 strawberries, quartered
  • 3/4 cup white sugar
  • 1/2 cup white rum
  • 1 cup club soda
  • 4 cups ice cubes

DIRECTIONS

This recipe’s Ingredients are for 4 servings.
  1. Pour sugar onto a small, shallow plate. Run one of the lime quarters around the rim of each cocktail glass, then dip the glasses into the sugar to rim; set aside.(OPTIONAL)
  2. Squeeze all of the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and 3/4 cup of sugar (OPTIONAL or use LESS). Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the rum and club soda until the sugar has dissolved. Pour into the sugared glasses over ice cubes to serve.
